This Muffin Mix, is really simple and it last’s for a few days so you can make it in advance.
1/2 pound butter
2 cups sugar
1 1/2 teaspoons vanilla
2 teaspoons baking soda
2 teaspoons baking powder
1/2 teaspoon salt
4 cups Flour
1/2 quart buttermilk
In a mixer add butter and sugar and mix together. Stop the mixer, scrape the sides, add the eggs and vanilla and start mixer again. Once the vanilla and eggs have blended with the butter and sugar, stop the mixer, scrape the sides and add the baking soda, baking powder, salt, and flour and start the mixer again. Finally add the butter milk and keep mixing. Once the batter has blended, your mix is ready. Add blueberries, chocolate, lemon, whatever you like. This mix holds up and tastes great.
