Chicken and Waffle Muffin

The Chicken and Waffle Muffin has been in Research and Development for a long time.  Now, I am proud to present the greatest Chicken and Waffle Muffin the internet has to offer.


In one hand, a waffle muffin drenched in syrup, the other hand holds a skewer of chicken nuggets.  This Muffin makes you feel like a Southern Fried Viking.

I tried to make a maple syrup frosting but it was just too sweet, and pure maple syrup is just better.  So drench your muffins in maple syrup and chow down.




For the Muffin-

4 cup flour

4 teaspoon baking powder

2 teaspoon baking soda

1 teaspoon salt

6 tablespoons sugar

2 and 2/3 cup buttermilk

4 egg

6 tablespoons pure maple syrup

6 tablespoons melted butter


For the Chicken-

1 boneless skinlesxs Chicken breast, cubed (about ½ inch pieces)

3 cups buttermilk

1 cup flour

1 teaspoon garlic powder

1 teaspoon onion powder


5 tablespoons oil



For the Muffin-

Preheat your oven to 350°.  In a bowl, mix together flour, baking powder, baking soda, salt, and sugar. Set aside, in another bowl whisk together the eggs, melted butter, maple syrup, and buttermilk.  Add wet ingredients to the dry and stir until just mixed.  Scoop the batter into the the Muffin pans and bake for 20-30 minutes or until browned on top.

Tip: Not sure they’re finished? Take a toothpick and stab one. They’re done when your tooth pick comes out clean.

For the Chicken-

Soak the Chicken for 30 minutes in the buttermilk. Mix the flour, garlic powder, onion powder, and S/P. After 30 minutes remove the Chicken from the buttermilk and dredge it in the flour mixture.

Heat the oil in a pan. Once all the pieces of Chicken have been floured and the pan is hot, start frying.  Fry the nuggets on all sides until they are golden brown on all sides.  Take the nuggets out of the pan and place them on a paper towel.

Tip: an easy way to get rid of all that hot oil is to add your used buttermilk and flour to the oil. The milk and flour will speak up the flour and you can  just throw it out in the trash.

Once the nuggets are cool, skewer the Chicken and stab it into the Muffin. Then take your maple syrup and drizzle the the finished Muffin. Enjoy.
