Apple Crisp Mini Muffin

I love this recipe because all the hard work is  done way before you start baking. I use frozen apples from the fall before…oh right! during the fall I take fresh apple peel, slice and toss with sugar brown sugar, cinnamon and lemon juice. Ziplock and freeze for apples all winter-and spring. So yeah I use frozen apples, phyllo dough cups from the frozen foods section, and a quick mix of flour butter and brown sugar for a sweet and crispy topping.

Preheat oven to 400°.  Take a small amount of apples to fill up the cups, sprinkle the crisp mix on each and place in the oven for around ten minutes or until the phyllo cups begin to brown
