Gluten Free Lasagna Muffin

½ box, brown rice lasagna

1 medium jar Marinara sauce

3 cups Mozzerella

1 ½ cups Parmesan

1 Eggplant

1 medium onion chopped

1 clove garlic chopped

1 cup chopped mushrooms

Italian Seasoning

Olive Oil


Preheat oven to 375°.  Saute eggplant, onion, garlic, and mushrooms until soft.  Mix sautéed vegetables with marinara sauce, season with Italian spices.  While sautéing cook pasta roughly three minutes less than the packages directions, drain. Wrap each muffin cup with a piece of lasagna, then layer sauce and cheese in the center
