Baked Falafel Muffins

T’was a degree of pessimismfalafel muffin

Floating within the Supper Muffin Kitchen

Many doubted whether it was possible

To cook muffins of Falafel

But, all queries were quelled, by the Muffin Man

When he said: “in a muffin pan? Yes we can!

T’would be nothing but colossal

If we made muffins of Falafel!”

Falafel Muffins, a great Mediterranean appetizer for your next party, quick dinner, or just snack.

This recipe is very easy, while making you feel quite accomplished.


We love to use fresh produce whenever possible.  We used fresh butter lettuce and tomatoes from Supper Muffin Club’s very own garden!



For the Falafel:

1 Can drained Chickpeas

1 Onion, chopped.

2 Cloves of Garlic, chopped.

1 teaspoon Coriander

1 teaspoon Cumin

2 Tablespoons Flour

Salt and Pepper to taste


For the Falafel

Preheat oven to 350°.  Mix chickpeas, garlic, onion, coriander, cumin, s&p in a bowl, add flour.  Mash chickpeas and mix.  You want a thicker paste, so use a food processor for the best results.  Form into muffin size balls and fill each cup. Place in the oven and bake for 30 minutes or until the tops begin to brown. Remove from oven, cool, top with tzatziki sauce, and enjoy.

Don’t have a good tzatziki?

E-Z Tzatziki Sauce

½ Cup plain greek yogurt

½ Cup sour cream

1 Cucumber

1 Clove of Garlic, minced

Lemon zest

2 Tablespoons of dill pickle juice.

Mix all ingredients.

  1. I LOVE THIS. I’ve tried a few times to make baked filafel- and while the taste was there, the texture was always a bit on the lackluster side. Muffin tins! Great job – and will be trying this one soon!
