Bacon Egg and Cheese Muffin.

Bacon, egg, and cheese muffin. Yeah ok.  It’s not a perfect haiku.  But being a great poet means you push the boundaries of the form.  It’s the same with Supper Muffins.  The Muffin pan is the form, and we’re always pushing the pan.  This one isn’t even a Supper Muffin , its a Breakfast Muffin.  This is a great recipe for those busy mornings or for the big breakfast mornings when everyone comes over.  They call for nearly no prep time and are done in less than 15 mins.

This recipe proves that even on those busy mornings you can be creative and push the bounds of breakfast.

Recipe:

Ingredients:

Bacon- one slice per cup

Egg- one per cup

Cheese- one per cup

S&P to taste

Directions:Bacon, egg and cheese muffin2

Preheat oven to 350°.  Wrap each cup with bacon, place in oven for 2-4 minutes, remove.  Crack an egg into each bacon wrapped pan.  Sprinkle with cheese and cook for an additional 8-10 minutes.  Remove from oven to cool enough to serve.
