Crustless Quiche Muffins

Mini Quiche are a great recipe to involve a party of family or friends.  It is also a great way to use fresh produce.  Simple and fun to make. The quiche muffins come out of the oven a colorful quilt of yellows, reds, and greens. Quiche MuffinUse whatever veggies you want to make your own collage!

These Crust less Quiches are great for gluten intolerant eaters or those who just don’t like quiche crust.  Please feel free to leave your favorite Quiche Crust recipes below and you might be featured in an up coming recipe.



  • Four Eggs
  • One Cup Half and Half, or your favorite dairy/dairy substitute)
  • Chopped vegetables( i used red onions, yellow and green peppers, asparagus and garlic)
  • 1.5 cups of cheese (cheddar, swiss or feta are all delicious options)
  • S&P to taste


Set oven to 350°.  In a bowl blend eggs and milk, set aside.  Sautee vegetables until soft, place to the side.  Grease your muffin pan and start to assemble.  Take a spoonful of vegetable mix and place one in each muffin tin, add a healthy pinch of cheese.  Remember to leave space for the egg mixture, but you don’t need to put that in your long-term memory because that’s the next step.  Fill each tin with the egg mixture.  Place in the oven for 10 minutes or until the tops begin turning golden brown, remove to cool.  Scoop, serve, and savor.

Note: You’ll probably have more than enough mix which is good.  Its always better  to have too much than too little, store it in a container and make Pancake Muffins tomorrow! (recipe coming soon).
